Chicken Cheese Bake
1 cup pancake mix
4 eggs
½ cup oil
½ cup grated parmesan or shredded cheddar cheese
⅛ tsp salt
⅛ tsp pepper
1 ½ cups chopped cooked chicken
Alternative versions:
- 3 cups broccoli & ¼ chopped onion with or without chicken
- ½ C frozen mixed vegetables or chopped assorted fresh
- Chicken, cheese and bacon
Preheat oven to 350.
In a medium bowl, add all ingredients together and mix well until combined. Spray pie plate with cooking spray or coat with vegetable oil with a paper towel. Pour batter into a pie plate or 8” pan. Bake for 30 minutes or until golden brown and the knife comes out clean.
This is a great main dish with soup or salad on the side. Can be cut and put into freezer bags.
Easy Chicken Soup
1 package of Ramen Noodles and flavor packet
1 cup of chopped cooked chicken
Make Ramen noodle soup(follow recipe on the back of the package)
Once soup is make add chicken
Alternative versions:
- Add chopped avocado, chopped tomato
- Drain liquid and make a noodle bowl with any cooked protein (steak, chicken, shrimp) with chopped vegetables: carrot, cucumber,
Easy Quesadillas
Flour Tortillas – any size
Cooked chicken sliced
2 Tbsp olive or vegetable oil
1 cup shredded cheese
Prepare a few quesadillas before heating the oil : Sprinkle some shredded cheese on one side of the tortilla, top with 3 slices of chicken and sprinkle more cheese on top of the chicken. This helps the tortilla stick together. . Fold tortillas over and set aside until you have all your quesadillas prepped. Heat 2 Tbsp oil in a frying pan on Medium and place folded tortillas in the pan. Cook until both sides are brown and crispy, flip a few times to get the desired result. Serve with salsa and sour cream!
Alternative versions:
- Add hot peppers
- Add beans, black or refried
- Can be made with steak, shrimp or just cheese
